We may have just created the winning Memorial Day recipe combo – Grilled Daring x Tajin Plant Chicken. Served with pineapple salsa, and cilantro lime aioli, it’s a transporting meal that will take you someplace very relaxing this long weekend.

Pineapple Salsa:
In a medium bowl, combine pineapple, red pepper, cilantro, red onion, jalapeno, garlic, and lime juice. Stir until well combined. Season with salt, to taste. Serve at room temperature or chilled.
Cilantro Lime Aioli:
Place all ingredients into a blender. Blend until well combined and fairly smooth.
Whisk together the agave syrup, juices, zests, garlic, olive oil and Tajín. Open package of Daring and pour marinade over it. Place in fridge for 4 hours or overnight.
Heat a large non-stick frying pan over a medium-high heat. Reduce to medium and add 2 tbsp of oil. Add the Daring Plant chicken, and cook for 2-3 mins each side, until it is golden and crispy.
In a separate pan or toaster oven toast buns. Once toasted spread cilantro lime aioli on both sides of bun. Place lettuce on bottom of bun. Arrange Daring pieces on top of lettuce and top with pineapple salsa.
