Cook the Daring: In a large, rimmed pan or skillet on medium heat add olive oil. Add the Daring pieces, dried rosemary, dried thyme, and black pepper and stir to coat. Cook pieces for 2-3 minutes on both sides so they are brown and crispy on the outside. Remove them from the pan.
Cook the aromatics and make a roux: In the same pan on medium low, add the butter, garlic, and fresh thyme and cook for 30 seconds until fragrant. Add the flour and stir so it absorbs the butter and begins to brown, 1 to 2 minutes.
Add the broth, cranberries, and seasonings: Add the vegan chicken broth and whisk until smooth and thick. Add the cranberries, honey, tamari, dijon, lemon juice, red wine, and thyme sprigs. Once the mixture comes to a simmer, add the Daring pieces back in
Simmer and serve: Simmer everything together for 10-15 minutes until the sauce thickens and the cranberries have broken down. Add salt to taste. Remove the thyme sprig and serve over roasted or mashed potatoes
