Not too big on spicy? You can adjust the amount of cayenne pepper to 1 tsp, or even 1/2 tsp, depending on your personal heat tolerance.
Place a 10” skillet with 1/2” of vegetable oil (about 1 cup) over high heat. Heat until the oil registers 325ºF with an instant-read thermometer and carefully add the daring breaded pieces in one even layer. Shallow fry for 2 to 3 minutes on each side, or until golden brown and crispy. Remove to a wire rack set over paper towels to drain.
While Daring cooks, combine the cayenne pepper, brown sugar, paprika, chili powder, garlic powder and kosher salt in a small bowl and reserve.
When the Daring Pieces are done frying, add 2 tbsp of the hot frying oil to a small saucepan along with the vegan butter and the spice mix. Stir together over low heat until the glaze is thoroughly combined and just beginning to bubble—around 30 seconds to 1 minute. Remove from heat.
Using a pastry brush, generously brush the spicy glaze over each piece of Daring. Turn and repeat on the other side.
Serve immediately, piled high on white bread and garnished with sliced pickles. Keep plenty of napkins handy—you’ll need ‘em!
