Golden Plant Chicken with Juicy Tomatoes and Beans

Perfectly seared golden Plant Chicken is something we crave pretty much twenty-four hours a day. This simple Plant Chicken dinner recipe will satisfy your summers evening cravings for something light, healthy and nutritional.

  • 1 Pkg Daring Original Plant Chicken Pieces
  • 28¼ oz cherry tomatoes
  • 5¾ oz Kalamata olives
  • ½ red onion
  • 1¾ oz fresh parsley
  • 17¾ oz drained cooked butter beans
  • 1 tbsp sherry vinegar
  • ¾ oz parmesan
  • 4 tbsp sun-dried tomato pesto
  • 2 tsp dried oregano
  • TT Salt
  • TT Pepper

TO SERVE

  • 1 lemon
  • Crusty bread

Step 1

Heat the oven to 400°F. Put the cherry tomatoes, olives and oregano onto a baking tray, season with salt and pepper and roast for 25 mins. Remove from the oven and set aside.

Step 2

Finely slice the red onion and pop into ice-cold water. Finely chop the parsley.

Step 3

While the tomatoes are roasting, Cook your Daring Plant Chicken. Heat a large non-stick frying pan over a medium-high heat. Reduce to medium and add 2 tbsp of oil. Add the Daring Plant Chicken, and cook for 2-3 mins each side, until it is golden and crispy. (Alternate method: air fry at 400 from frozen for 8 mins flipping halfway through)

Step 4

Drain and rinse the beans and mix with the sherry vinegar and parsley. Gently stir through the roasted tomatoes and olives, then season with salt and pepper.

Step 5

Spoon the beans onto a large platter and top with the crispy Daring Plant Chicken. Garnish with Parmesan shavings, red onion, and pesto. Serve with lemon wedges and bread to mop up all the juices.
