We took the classic Tex-Mex fajita and defeathered it. With simple ingredients, minimal prep and a short cook time, these bright bites will be fast to the table and gone even faster.

Prepare your peppers, onion and garlic.
In a saute pan, heat grapeseed oil over medium heat.
Add daring and cook until they begin to golden, about 5 minutes.
Add sliced onion and garlic and stir. Cook 3-5 minutes to soften.
Add red bell pepper, orange bell pepper and sea salt.
Add chili powder, ground cumin, ground coriander and ground cinnamon.
Squeeze half a lime over the mix, stir, then remove from heat.
Heat your tortilla and top with caramelized daring vegetable fajita mix.
Sprinkle with cilantro leaves and serve with a lime wedge.
