Daring Spanish Plant Chicken

Ingredients

  • 2 pkgs Daring Original Plant Chicken Pieces
  • 2 tbsp extra virgin olive oil
  • 1 onion, thinly sliced
  • 5 oz Soyrizo
  • 1 red pepper, deseeded and sliced into strips
  • 1 yellow pepper, deseeded and sliced into strips
  • 1 tsp sweet smoked paprika
  • 4 garlic cloves, finely chopped
  • 14 oz can chopped tomatoes
  • 5 oz pitted green olives
  • 14 oz can butter beans, drained and rinsed
  • Small handful of flat-leaf parsley, chopped

Step 1

Preheat the oven to 400°F/375°F fan

Heat the olive oil in a large ovenproof frying pan over medium heat. Sear the Daring Plant Chicken two minutes on each side or until golden brown. Set aside.

Add more oil if needed then add the onion, soyrizo, and peppers, along with a pinch of salt and pepper. Cook for 15 minutes, stirring occasionally, until the vegetables have softened and the soyrizo is slightly crispy. Add the smoked paprika and garlic and cook for another 2-3 minutes until fragrant.

Step 2

Stir in the chopped tomatoes, olives, and butter beans. Season with salt and pepper to taste.
Nestle the Daring Plant Chicken pieces into the mixture, ensuring they are partially submerged in
the sauce. Season the plant-based chicken lightly with salt and pepper.

Transfer the pan to the oven and bake for 25-30 minutes, or until the sauce is bubbling and the
plant-based chicken is heated through.

Scatter with chopped parsley and serve!
