Ingredients

For the Daring Plant Chicken:

  • 2 pkg Daring Original Plant Chicken Pieces, thawed
  • 1 teaspoon salt
  • 1 pinch ground white pepper

For the rice:

  • 1 ½ cups jasmine rice or short-grain white rice
  • 2 tablespoons neutral cooking oil
  • 4 stalks scallions, finely chopped
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • ¼ teaspoon salt

For the sauce:

  • 2 tablespoons light soy sauce
  • 1 tablespoon fresh lime juice
  • 1 teaspoon sesame oil
  • Fresh chili, finely chopped (optional)

You also need:

  • Cucumber, sliced, or blanched green vegetables (e.g., Bok Choy, spinach, etc.)

Step 1

Prepare the Daring Plant Chicken. Take the thawed plant chicken pieces out of the package and pat them dry with a paper towel. Sprinkle the pieces with salt and white pepper, rubbing to evenly distribute. Let them marinate for 10 minutes.

Step 2

Cook the rice and plant chicken. Rinse the rice with cold water until the water runs clear, then drain well. Set aside. Heat oil in a pot over medium heat on the stove Add the chopped scallions, minced ginger, and minced garlic. Fry until fragrant (about 1-2 minutes, being careful not to burn). Scoop out about ⅔ of the fried aromatics into a small bowl and set aside for the sauce. Add the drained rice to the pot and fry for 30 seconds, stirring to coat the rice with the oil and aromatics. Add 2 cups of water and ¼ teaspoon of salt. Use a spatula to scrape the bottom of the pot to loosen any stuck grains.
Place the marinated plant chicken pieces on top of the rice without overlapping.

Leave the pot uncovered until the water starts to boil gently. Then, cover with a tight lid and reduce the heat to the lowest setting. Cook for 20 minutes.

Step 3

Rest the dish. Turn off the heat and let the pot sit, covered, for 10 minutes. Do not open the lid during cooking or resting.

Step 4

Prepare the sauce

In the small bowl with the reserved fried aromatics, add the light soy sauce, lime juice, sesame oil, and fresh chili (if using). Mix well to combine.

Step 5

Serve the dish. Remove the plant chicken from the pot. Slice them into bite-sized strips if needed. Fluff the rice with a fork and divide it among serving plates.

Place the sliced plant chicken on the side, along with cucumber slices or blanched green vegetables.

Serve the sauce on the side as a dipping sauce or drizzle it over the Daring plant chicken.
