YES, it is entirely possible to whip up this fancy-schmancy—and super-addictive—dish in the comfort of your own kitchen. Instead of spicy tuna, our take on Crispy Rice features crispy rice exterior topped with soft rice, avocado, spicy Daring Plant Chicken, jalapeños and sriracha. It’s a flavor and texture party with every indulgent bite.

Prepare sushi rice as directed on the packet. Once ready add rice vinegar, salt and sugar. Take seasoned rice and form it into a square around 2” thick. Cover and refrigerate rice for at least 1 hour so it’s easy to work with.
Meanwhile, fill a medium sized pot with vegetable stock, add sriracha, bring to the boil, then add Daring Plant Chicken Pieces. Bring back to boil then turn the heat down to gently simmer the pieces for half an hour When Daring is ready, drain and set aside to cool slightly.
Once rice is cold, unwrap, cut into small rectangular blocks and roll lightly in tapioca flour. Heat a pan with frying oil and fry rice until golden and crispy on top and bottom.
Prepare drained Daring Plant Chicken Pieces, lightly pat dry, then finely chop into a coarse mince like texture and place into a bowl. In a separate small dish, stir dressing ingredients then mix together with Daring Plant Chicken.
Top crispy rice with mashed avocado, spicy Daring Plant Chicken, a thin slice of jalapeno and a drizzle of sriracha. Enjoy!
