Crispy Chicken with Turmeric Tahini Noodles

Warning, you’re about to become highly addicted to this quick, healthy, comforting dish. This Crispy Daring Plant Chicken Turmeric Noodle Bowl is the easiest weeknight dinner. Packed full of spices, creamy tahini, greens, and plant chicken protein it’s got all the nutrients and comfort you need at the end of a long day!

Ingredients

  • 1 Pkg Original Daring Plant Chicken
  • 8½ oz Instant Noodles
  • ½ Cucumber
  • ½ oz Coriander
  • ½ oz Mint
  • 3 tbsp Toasted Sesame Seeds
  • 1 Lime
  • Chilli Oil

For The Dressing:

  • 1 tsp Ground Turmeric
  • 1 tsp Curry Powder
  • 2 tbsp Tahini
  • 1 tbsp Miso Paste
  • 1 Lime

Step 1

Heat a large non-stick frying pan over a medium-high heat. Reduce to medium and add 2 tbsp of oil. Add the Daring Plant chicken, and cook for 2-3 mins each side, until it is golden and crispy.

Step 2

Make the noodle dressing. Drop the turmeric and curry powder into a deep saucepan (don’t worry you’ll use this pan again shortly) and place over a medium heat. Toast for a minute, until it starts to smell fragrant, then remove into a bowl. Fill the pan with water and place over a high heat.

Step 3

Whisk the tahini and miso into the spices. Squeeze in the juice of one of the limes and whisk together – it’ll seize and look lumpy but don’t worry. Whisk in enough water to make it the consistency of single cream, it’ll take quite a lot of water to loosen it, up to around ¼ cup.

Step 4

Slice the cucumber in half lengthways and add to a bowl. Use a teaspoon to scoop out the seedy core, then slice into half moons. Add to a bowl along with most of the coriander and mint leaves. Add two-thirds of your sesame seeds and the juice of ½ the lime. Season with salt.

Step 5

Drop the noodles into the water and cook according to packet instructions then drain, rinse with a little cold water and drop into a bowl. Add the dressing and toss well. Taste and season, then spoon into bowls.

Step 6

Top with the Daring plant chicken. Snuggle the cucumber salad to the side of the bowl, then finish with the remaining sesame seeds, herb leaves and the remaining lime half to squeeze over at the end. Serve with chili oil if you like.
