We unapologetically combined our new Buffalo Plant Chicken Wings with Ithaca Hummus’ Buffalo Ranch Hummus for the ultimate tangy twist on a street food classic: the gyro. Yeah–you read that right. Buffalo. Gyro.

Cook Daring Buffalo Wings from frozen in the air fryer for 8 minutes, turning halfway through, until crispy.
Make tzatziki sauce: Roughly chop the fennel, fronds, and dill, and thinly slice the celery.
In a medium bowl, whisk together vegan Greek yogurt, lemon juice, fennel, fronds, and dill. Set aside.
Cut the tomato in half and then into thin slices. Do the same with the red onion.
Make your wrap: Cut the parchment paper sheets in half, creating two large rectangles. (Or use similar-sized tin foil rectangles)
Then take one piece of parchment paper and place it on a plate or your working surface. Add a Pita flatbread on top towards the right edge.
Spread a generous amount of hummus directly onto flatbread.
Add 2-3 slices of tomato and 2-3 slices of red onion
Add Daring Buffalo Wings
Top with tzatziki sauce and crumbles of vegan feta cheese.
Wrap together by overlapping the right edge of the parchment paper around the bottom of the Pita wrap. And then wrap the left side of the parchment paper on top. Put hummus directly on your pita.
Serve immediately with a side of fries and extra hummus.
