Apple Cider Braised Plant Chicken with Mashed Potatoes and Garlicy Broccoli

Ingredients

  • 1 Pkg Daring Original Plant Chicken Pieces
  • ½ tablespoon olive oil
  • 1/2 tablespoon butter (sub vegan butter if desired)
  • ¼ teaspoon freshly ground black pepper
  • ½ cup thinly sliced onion
  • 1 garlic cloves, minced
  • 1 tablespoons flour
  • 1/2 cup apple cider vinegar
  • ½ cup veggie stock
  • ½ cup apple cider
  • 2 sprigs fresh rosemary

Mashed Potatoes

  • 3 pounds potatoes (I use half Yukon Gold, half Russet potatoes)
  • 1 large cloves garlic, minced
  • fine sea salt
  • 3 tablespoons butter (sub vegan butter if desired)
  • 1 cup whole milk (sub vegan cream if desired)
  • 4 ounces cream cheese, room temperature (sub vegan cream cheese if desired)
  • Freshly-cracked black pepper

Garlicky Roasted Broccoli

  • 1 pound broccoli
  • 1/4 cup olive oil
  • 1 tablespoon rice vinegar
  • 6 cloves garlic, peeled
  • 1 teaspoon salt
  • Red pepper flakes, optional
  • Lemon wedges, to garnish

Mashed Potatoes

  1. Cut potatoes into evenly-sized chunks, about an inch or so thick, and transfer them to a large stockpot full of cold water.
  2. Place the potatoes in a pot covered with cold water about 1 inch above the potatoes. Stir the garlic and 1 tablespoon sea salt into the water. Then turn the heat to high and cook
    until the water comes to a boil. Reduce heat to medium-high (or whatever temperature is needed to maintain the boil) and continue cooking for about 10-12 minutes, or until a knife inserted in the middle of a potato goes in easily with almost no resistance. Carefully drain out all of the water.
  3. Prepare your melted butter mixture. Heat the butter, milk and an additional 2 teaspoons of sea salt together in a small saucepan. You want to avoid boiling the milk. Set aside until ready to use.
  4. Mash the potatoes. Using your preferred kind of potato masher mash the potatoes to your desired consistency. Then pour half of the melted butter mixture over the potatoes and fold it in with a wooden spoon or spatula until potatoes have soaked up the liquid. Repeat with the remaining butter, and then again with the cream cheese, folding in each addition until just combined to avoid over-mixing. Taste and season.

Garlicky Roasted Broccoli

  1. Arrange a rack in the middle of the oven and heat to 450°F. Cut the broccoli into bite-sized florets. Cut the stems into diagonal bite-sized pieces. Place in a large bowl.
  2. Place the olive oil, rice vinegar, garlic, and salt in a small food processor and process until thick and creamy. Add a pinch of red pepper flakes.
  3. Add the dressing to the broccoli and toss to coat. Transfer to a rimmed baking sheet and spread in an even layer.
  4. Roast until the broccoli is tender and the edges are singed, 12 to 15 minutes. If you desire an extra measure of smokiness, switch the oven to broil, and move the baking sheet up to the highest rack. Broil for 1 to 2 minutes. Serve hot or cold with wedges of lemon.

Step 1

In a large, high-sided pan, heat the butter and olive oil over medium heat. Season both sides of the Daring Pieces evenly with the pepper, then add to the pan. Cook Daring Pieces until golden, about 2-3 minutes per side. Remove pieces from the pan and set aside.

Step 2

Add the onion and garlic to the pan and cook, stirring often, until the onion is soft and fragrant, about 3 to 4 minutes. Add the flour and cook for an additional 1 minute.

Step 3

Pour in the apple cider vinegar and stir quickly, scraping up any browned bits on the bottom of the pan. After about 30 seconds, add the veggie stock and apple cider.

Step 4

Bring to a boil, then reduce heat to low and simmer. Add the Daring Pieces back to the pan, as well as the rosemary sprigs (it’s a good idea to tie them together with kitchen twine). Cover pan, and simmer for 15 minutes.

Step 5

Remove cover from pan, flip the Pieces, and continue to simmer, uncovered, until tender, about 15 minutes more. Serve immediately a top mashed potatoes with a side of garlicky broccoli
