Slow-Cooker Plant Chicken Soup with Ginger & Fennel

Ingredients

  • 1 pkg Daring Original Plant Chicken Pieces
  • 4 cups low-sodium veggie broth, split in two
  • 1 (2-inch) piece ginger, grated
  • 3 garlic cloves, grated
  • 1 bunch scallions thinly sliced
  • 1 medium fennel bulb, very thinly sliced
  • 1/2 teaspoon red pepper flakes
  • Kosher salt
  • Juice of 1 lemon
  • Cooked soba noodles, according to package
  • Chili crisp, Fly By Jing, for serving

Step 1

Place two cups of broth in a small pot. Bring to a boil. Add Daring pieces then bring back to a boil and then reduce heat to simmer. Simmer Daring for 15-20 minutes. Drain and cool. Shred the Daring with two forks. Set aside.

Step 2

Combine ginger, garlic, scallions, fennel, shredded plant chicken, remaining broth, and red pepper flakes in a small pot. Stir in 1 cup of water, then season with a big pinch of salt. Cook on high for 1 hour or on low for 2 hours. For the last 30 minutes, add back shredded Daring plant chicken.

Step 3

Stir in lemon juice. Add more salt to taste.

Step 4

Serve soup with soba noodles and a good drizzle of chili crisp.
