Ingredients

Spicy Teriyaki Sauce:

  • 1 package Daring Diced Plant Chicken
  • ¼ cup tamari
  • 2 tbsp brown sugar
  • 2–3 cloves garlic, grated
  • 1-inch piece ginger, grated
  • 2 tsp rice vinegar
  • 1 tsp sesame oil
  • ½ tbsp sriracha
  • 1½ tsp cornstarch
  • 2 tbsp water

Pickled Cucumber & Radish:

  • 3 Persian cucumbers, mandolined or thinly sliced
  • 3-4 radishes, mandolined or thinly slice
  • 3 tbsp rice vinegar
  • 1 tbsp tamari
  • 1 tsp gochugaru (or ¼ tsp red chili flakes)
  • 1 tsp sugar
  • ¼ tsp salt
  • 1 tbsp cilantro, chopped

For the bowls:

  • Cooked basmati rice
  • Shelled edamame
  • Scallions, thinly sliced
  • Lime wedges

Step 1

Pickle the vegetables: In a mason jar or container, combine cucumbers, radishes, rice vinegar, tamari, gochugaru, sugar, salt, and cilantro. Shake to combine, then refrigerate until ready to serve.

Step 2

Make the sauce: In a small bowl, whisk together the tamari, brown sugar, garlic, ginger, rice vinegar, sesame oil, sriracha, cornstarch, and water until smooth.

Step 3

Cook the Daring: Follow the stovetop instructions on the package, cooking over medium heat for 3–4 minutes until beginning to brown. Reduce heat to low, pour in the teriyaki sauce, and cook 1–2 minutes until thick and glossy.

Step 4

Assemble: Layer rice, edamame, and Daring. Top with pickled vegetables, scallions, and a squeeze of lime.
