Make the pico: Combine tomato, onion, jalapeño, cilantro, lime, and salt. Let it marinate for 15 minutes.
Make the chipotle sour cream: Stir together sour cream, enchilada sauce, chipotle, maple syrup, and lime zest until smooth.
Prepare the Daring: Microwave according to package instructions, then toss with enchilada sauce.
Assemble the tacos: Heat a pan over medium-low heat and add a little neutral oil. Place two tortillas in the pan and cover each with shredded cheese.
