  • 1/4 cup cilantro, chopped
  • Squeeze of lime
  • 1/4 tsp salt

Chipotle sour cream:

  • 1/3 cup vegan sour cream
  • 1 tbsp red enchilada sauce
  • 1 tbsp chipotle in adobo sauce
  • 1 tsp maple syrup
  • 1 tsp lime zest (about 1/2 lime)

For the tacos:

  • 4–6 small flour tortillas
  • Vegan shredded Mexican-style cheese
  • Guacamole or avocado slices
  • Hot sauce

Step 1

Make the pico: Combine tomato, onion, jalapeño, cilantro, lime, and salt. Let it marinate for 15 minutes.

Make the chipotle sour cream: Stir together sour cream, enchilada sauce, chipotle, maple syrup, and lime zest until smooth.
