Obsessed With Daring Pesto Pasta


Whether you’re eating it off a plate or feeding it to your lover, this Daring Pesto Pasta is both delicious and satisfying. Original Daring Plant Chicken pieces get tossed in herby pesto and topped with Calabrian chilis and cherry tomatoes–making it the hottest date-night dish around. Obsessed.

  • 1 pound spaghetti, or your favorite pasta
  • 2 cups fresh basil leaves, de-stemmed
  • ½ cup EVOO
  • 3 tbsp pine nuts or cashews
  • 4 cloves garlic
  • 1 cup cherry tomatoes
  • ½ cup Calabrian chili peppers, drained
  • ½ cup vegan parmesan cheese
  • Kosher salt and freshly ground black pepper

Step 1

Fill a pot with water and salt the water. Bring the water to a boil and add in the pasta. Boil until al dente (see package directions).

Remove from the heat and drain.

Step 2

In a blender or food processor, combine basil, olive oil, nuts, and garlic and blend until smooth. Place the pasta in a large bowl and add the pesto. Mix well.

Step 3

In a hot large sauté pan put 1 Tablespoon of oil. Place in Daring Plant Chicken Pieces and sear 2 minutes per side. Before flipping Daring, add the cherry tomatoes to the pan along with peppers. Place in pasta and toss together. Season with salt and pepper.

Step 4

Serve immediately with vegan parmesan cheese and fresh basil leaves.
