Heat 1 tbsp olive oil in a large skillet over medium heat. Add the Plant Chicken Pieces, season with a pinch of salt and pepper, and cook until lightly browned, about 4-5 minutes. Stir in balsamic vinegar and half the garlic, cooking for another minute. Remove plant chicken to a plate.
In the same skillet, add remaining 1 tbsp olive oil and vegan butter. Add onions, thyme, and a pinch of salt. Cook, stirring occasionally, until onions are deeply caramelized, about 20-25 minutes.
Stir in remaining garlic and cook for 1 minute. Add orzo and toast for 2 minutes, stirring to coat.
Pour in vegetable stock, bring to a simmer, and cook, stirring occasionally, until orzo is al dente, about 10-12 minutes. Stir in plant-based cream and return plant chicken to the skillet. Cook until heated through, about 2-3 minutes.
If using, sprinkle with vegan Parmesan before serving. Adjust seasoning to taste.
