  • 1 Package Daring Shredded Plant Chicken
  • 1/2 large white or yellow onion, diced
  • 1 carrot, diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano (or parsley)
  • 1/2 tsp red chili flakes (less if you don’t like spice)
  • 1/2 tsp black pepper
  • 1/4 cup dry white wine
  • 6 cups vegetable broth
  • 1 lb gnocchi
  • 1/2 cup unsweetened vegan heavy cream (or coconut cream)
  • 2 cups baby spinach
  • 1/4 cup parsley, chopped

For serving:

  • Vegan Parmesan
  • Lemon wedges

Step 1

Sauté the aromatics: Heat olive oil in a large pot or skillet over medium heat. Add onion, celery, and carrot and cook for 1–2 minutes or until translucent. Add garlic, thyme, oregano, chili flakes, and black pepper. Cook for 1 minute until fragrant.

Step 2

Deglaze with wine: Pour in white wine and cook until mostly evaporated, about 1–2 minutes.

Step 3

Add the gnocchi and finish: Add the gnocchi and cook until they float to the top. Stir in vegan heavy cream, spinach, and parsley. Reduce heat and cook just until the spinach wilts.
