Baked Buffalo Mac and Cheese

We combined our crispy Breaded Plant Chicken pieces with Banza’s Plant-Based Mac to create the comfort-food extravaganza you’ve been searching for all season long. (Pro tip: save this recipe if you’re looking for some plant-based sides this Thanksgiving).

Ingredients

FOR THE BUFFALO CHICKEN

  • 1 8oz pouch Daring Breaded Plant Chicken Pieces
  • ½ cup Franks Red Hot Buffalo Sauce

FOR THE BAKED MAC

  • 1 box Banza Plant-Based Mac
  • 1/4 cup, plus 2 TBSP grated vegan parmesan cheese, divided
  • 1/4 cup Panko breadcrumbs
  • Dash of black pepper

Step 1

Set a skillet over medium heat and add ¼ inch oil. Once oil is hot, carefully lower frozen Daring pieces into the pan. Cook each side for about 2-3 minutes or until golden brown and crisp. Allow pieces to dry and cool on a baking rack or paper towels.

Step 2

Make Banza Mac according to package instructions.

Step 3

Place Mac in a cast iron skillet or oven proof baking dish. Mix in a quarter cup of grated vegan parmesan. Top with Panko bread crumbs, black pepper, and 2 TBSP grated vegan Parmesan.

Step 4

Bake until the cheese on top melts and the breadcrumbs become golden, about 15 – 20 mins.

Step 5

In a medium bowl, toss Daring pieces in Franks Red Hot Buffalo sauce.

Step 6

Serve with a drizzle of Franks Red Hot Buffalo sauce for some extra buffalo heat. Enjoy!
