Cook quinoa according to package, then cool.
Toss sliced delicata squash with olive oil and sea salt. Roast at 375 degrees foe 12-15 minutes.
Heat coconut oil in saute or fry pan over medium heat.
Add original daring pieces and cook until golden brown, about 8 minutes.
Whisk ingredients for dressing until smooth and creamy.
Assemble your salad! Portion out the quinoa, baby kale, cherry tomatoes, watermelon radish, cabbage, squash and top with daring pieces and pomegranate seeds. Drizzle with creamy tahini dressing and enjoy!
