Ingredients

For the sheet pan:

  • 1 package Daring Diced Plant Chicken
  • 19 oz can lentils, drained and rinsed
  • 1 pint baby tomatoes (cherry or grape), halved
  • 1 yellow or orange bell pepper, chopped into ½-inch pieces
  • 1 small eggplant, chopped into ½-inch pieces
  • 1 red onion, chopped into ½-inch pieces
  • 2 garlic cloves, chopped
  • 500 g (about 17–18 oz) store-bought potato gnocchi (check for vegan; most are egg-free)

For the Greek dressing:

  • ½ cup olive oil
  • ½ tablespoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of 1 lemon
  • ½ tablespoon red wine vinegar
  • 2 small garlic cloves, pressed or minced

Topping:

  • ½ cup Follow Your Heart Vegan Feta Crumbles
  • ½ cup chopped fresh herbs (mix of parsley, dill, and mint)
  • Extra drizzle of olive oil
  • (Optional) handful of black olives (pitted and halved or whole)

Step 1

Preheat the oven to 400°F and line a large baking sheet (or two if needed for space) with parchment paper for easy cleanup.

Step 2

In a small bowl or jar, whisk together all the Greek dressing ingredients (olive oil, oregano, salt, pepper, lemon juice, red wine vinegar, and pressed garlic). Set aside.

Step 3

To the prepared sheet pan, add the drained lentils, halved baby tomatoes, chopped bell pepper, chopped eggplant, chopped red onion, gnocchi, chopped garlic, and the frozen Daring Diced Plant Chicken. Spread everything out in an even layer.

Step 4

Drizzle the Greek dressing evenly over all the ingredients on the pan. Toss everything thoroughly with tongs or clean hands to ensure the veggies, gnocchi, lentils, and Plant Chicken are well coated.

Step 5

Bake for 25 minutes. At the 15-minute mark, remove the pan, toss everything again for even browning, and return to the oven.

Step 6

After the full 25 minutes, remove the pan, crumble the vegan feta over the top evenly. Bake for an additional 5 minutes until the feta softens slightly, the gnocchi is golden and crisp-edged, the veggies are tender, and the Plant Chicken are heated through and lightly crisped (they’ll absorb the flavors beautifully).

Step 7

Remove from the oven. Serve immediately, topped with the chopped fresh herb mix, a generous drizzle of olive oil, and optional black olives for extra briny pop. Enjoy!
