Ingredients

For the cilantro lime rice:

  • 1 cup long-grain white rice
  • 1/4 cup cilantro
  • 1/2 lime, juiced
  • 1/2 tsp salt

For the salsa verde plant chicken:

  • 1 package Daring Shredded Plant Chicken
  • 1 tablespoon avocado oil
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/4 tsp onion powder
  • 1/4 tsp black pepper
  • 2 large cloves garlic, grated
  • 2 stalks scallion, whites and green separated
  • 1/2 cup salsa verde

For the lime crema:

  • 1/3 cup vegan sour cream
  • Zest of 1 lime

For serving:

  • Avocado
  • Jalapeño
  • Pickled red onion
  • Homemade corn tortilla chips
  • Hot sauce

Step 1

Make the rice: Cook rice according to package instructions. Once fluffed, gently fold in cilantro, lime, and salt. Set aside.

Step 2

Cook the Daring: Add avocado oil to a pan on medium heat. Add cumin, coriander, onion powder, and black pepper. Toast for 30 seconds. Add Daring shredded plant chicken, garlic, and scallion whites. Cook for 5 minutes until beginning to crisp. Add salsa verde and cook for another 2 minutes. Stir in the green parts of the scallions and remove from heat.

Step 3

Make the crema: Whisk together the sour cream and lime zest.
