Make the tomato cucumber salad: In a bowl, combine cucumbers, bell pepper, cherry tomatoes, parsley, red wine vinegar, olive oil, salt, and pepper. Toss well and refrigerate until ready to serve.
Make the pepperoncini tzatziki: Squeeze out any excess liquid from the grated cucumber using paper towels or a clean dish towel. In a small bowl, combine cucumber, chopped pepperoncinis, Greek yogurt, garlic, dill, pepperoncini liquid, red wine vinegar, olive oil, oregano, salt, and pepper. Stir well and refrigerate.
