Ingredients

Spiced Daring:

  • 1 package Daring Shredded
  • ½ tsp cumin
  • ¼ tsp smoked paprika
  • ¼ tsp turmeric
  • ¼ tsp salt
  • ¼ tsp black pepper

Tomato Cucumber Salad:

  • 2 Persian cucumbers, diced
  • 1 red bell pepper, diced
  • ½ cup cherry tomatoes, diced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp red wine vinegar
  • ½ tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper

Pepperoncini Tzatziki:

  • 1 Persian cucumber, grated (about ⅓ cup)
  • ¼ cup pepperoncinis, chopped (4–5 whole)
  • ¾ cup plain (vegan) Greek yogurt
  • 1 clove garlic, grated
  • 2 tbsp fresh dill, chopped (or sub parsley)
  • 1 tbsp pepperoncini liquid
  • 1 tsp red wine vinegar
  • ½ tbsp olive oil
  • ¼ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp black pepper

For the Bowls:

  • Cooked quinoa
  • Extra pepperoncinis
  • Pickled red onions (optional)
  • Kalamata olives (optional)

Step 1

Make the tomato cucumber salad: In a bowl, combine cucumbers, bell pepper, cherry tomatoes, parsley, red wine vinegar, olive oil, salt, and pepper. Toss well and refrigerate until ready to serve.

Step 2

Make the pepperoncini tzatziki: Squeeze out any excess liquid from the grated cucumber using paper towels or a clean dish towel. In a small bowl, combine cucumber, chopped pepperoncinis, Greek yogurt, garlic, dill, pepperoncini liquid, red wine vinegar, olive oil, oregano, salt, and pepper. Stir well and refrigerate.

Step 3

Prepare the Daring: Follow the microwave instructions for Daring Shredded. Once heated, season with cumin, smoked paprika, turmeric, salt, and pepper; toss to coat evenly.

Step 4

Assemble: Layer cooked quinoa in bowls and top with tomato cucumber salad, spiced Daring, pickled onions, and olives if using. Finish with a dollop of pepperoncini tzatziki and a few extra pepperoncinis.
