Shawarma Plant Chicken Glow-Up Bowl

Ingredients

Shawarma Marinade

  • 2 packages Daring Original Plant Chicken Pieces
  • 2 lemons, juiced
  • 1/2 cup olive oil
  • 6 cloves garlic, minced
  • 1 tsp kosher salt
  • 2 tsp black pepper
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1/2 tsp turmeric
  • Pinch cinnamon
  • Crushed red pepper flakes to taste
  • 1 red onion, roughly chopped

For the Bowls

  • 1 1/2 cups dry jasmine rice
  • 1/2 cup hummus
  • 1 English cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • Fresh parsley, chopped Vegan feta

Vegan Tzatziki Sauce

  • 1 cup plain vegan yogurt
  • 2 cloves garlic, minced
  • 1 small piece English cucumber, peeled/diced
  • 1/2 tsp dried dill
  • 3 tsp lemon juice
  • Salt and pepper to taste

Step 1

Marinate:
Mix all marinade ingredients except the onion in a bowl.
Add the Daring Plant Chicken and marinate 1+ hours (or overnight)

Step 2

Prep Components:
Cook rice per package instructions
To make the tzatziki, mix all the sauce ingredients together in a bowl.
Chop the cucumbers and halve the cherry tomatoes for the bowls

Step 3

Cook:
Preheat oven to 400°F
Grease the baking pan.
Place the marinated chicken and the chopped onion in a pan.
Roast 18-20 minutes until crispy.

Step 4

Assemble the bowls by layering the rice with the marinated Plant Chicken, cucumbers and tomatoes.
A good dollop of hummus and tzatziki. Garnish with a sprinkle of fresh parsley, crumbled vegan feta, and red pepper flakes.
